Propionic acid is formed in the human body as a result of the decomposition of sugars, fiber and pectins by bacteria. This acid is commonly used in the food industry as a food preservative with the symbol E-280. It is an addition to packaged sliced bread, rye bread and pastry products. The maximum permitted dose is 3000 mg/kg. It is used as an anti-mold agent in animal feed.
