L-Ascorbic acid, also known as left-handed vitamin C. It is completely soluble in water, which results in an easy process of formulation of pharmaceutical products, supplements, food products. In large quantities it is used by food producers, who add it to their products to enrich the composition with this compound. In pharmacy and in cosmetic products, such as creams, fights free radicals and thus inhibits the aging process of the skin as well as the formation of wrinkles. L-ascorbic acid is a base for the production of salts and esters, which are used in the food industry as antioxidants and acidity regulators. Producers of fruit products add vitamin C to jam, juices, purees, to enrich their products with this ingredient. The antioxidant of l-ascorbic acid extends the stability of food products by inhibiting the oxidation reaction. It has reducing and antioxidant properties, which is why it is commonly used as a food additive with the E300 symbol. It limits adverse chemical changes in products such as fats, fruits and vegetables and in preserves. It protects food products against discoloration and browning. It also has acidifying or preservative properties. It inhibits the formation of poisonous nitrosamines in cured meats and preserves their natural colour. Used in brewing as a pH regulator.
